Veggie Noodle Stir Fry (Lo-Mein)

Ingredients
  

  • 1 lb spaghetti
  • 3 tbsp vegetable oil
  • 2 lrg eggs beaten
  • 2 baby bok choy thinly sliced
  • 1 red bell pepper thinly sliced
  • 1 bunch scallians cut 3-in
  • ½ cup carrots thinly sliced
  • ½ cup snow peas cut 1-in
  • dash ginger fresh grated
  • 2 cloves garlic
  • ¼ cup soy sauce low sodium
  • 3 tbsp black bean sauce
  • 1 lime juiced
  • 1 tbsp hot pepper sauce
  • 1 tbsp honey or sugar
  • 1 tbsp sesame oil

Instructions
 

  •  Cook pasta as directed.
  • In a large skillet heat 1 tbsp of the oil over high heat.
  • Add eggs and scramble until firm; transfer to a plate.
  • Add the remaining oil, then all of the veggies, except ginger and garlic.
  • Stir fry 2 minutes.
  • Add the ginger and garlic.
  • Stir fry 1 more minute.
  • In a small bowl or jar, stir together the soy sauce, black bean sauce, lime juice, hot sauce, honey or sugar, and sesame oil.
  • Toss the pasta with the sauce, veggies and top with the egg.
  • Serve.
