Chicken Empanadas
Ingredients
- 3 cups chicken cooked & shredded
- 8 oz colby jack cheese shredded
- 4 oz cream cheese softened
- 1 poblano pepper chopped
- 1 jalapeno chopped
- 1 tbsp cumin
- 1 ½ tsp salt
- ½ tsp pepper
- 15 oz pie crust refrigerated package
Instructions
- Pre heat oven to 400℉.
- Spray baking sheet with non stick cooking spray.
- In a large bowl, combine the chicken, cheese, cream cheese, poblano, jalapeno, cumin, salt, and pepper.3 cups chicken, 8 oz colby jack cheese, 4 oz cream cheese, 1 poblano pepper, 1 jalapeno, 1 tbsp cumin, 1 1/2 tsp salt, 1/2 tsp pepper
- On a floured surface, unroll pie crust. Cut into large circles, and use a 3 inch round cutter make smaller circles.15 oz pie crust
- Place 1 heaping teaspoon of chicken mixture in the middle of each circle.
- Fold pastry over filling and seal pressing edges with a fork.
- Place on the baking sheet and bake 15 minutes or until brown.
- Serve immediately.
