Mexican Roast

This roast can be used stand alone or inside any kind of tacos, tamales, or burritos.

Ingredients
  

  • 2 med yellow onions
  • 6 cloves garlic
  • 8 tomatillos
  • 3 roma tomatoes
  • 4 poblanos
  • 2 jalapeno pepper roasted
  • 1 cup cilantro
  • 2 tsp salt
  • 2 tbsp black pepper
  • 1 lemon juiced
  • 2 tsp cumin
  • 2 tsp onion powder
  • 2 tsp garlic powder

Instructions
 

  • Choose a beef or pork roast.
  • Combine all the ingredients into a slow cooker.
  • Cook on low heat at least overnight.
  • Remove roast; strain broth from slow cooker and set aside.
  • Pull roast as desired and put in a large bowl; pour broth over roast and let it rest for at least 20 minutes; then drain.
